Seven years ago when we happened upon the rumbled property that is now our San Michele, we never imagined we would one day produce olive oil, let alone share it with our Patina Collection family. The groves had been abandoned for over a decade, the trees left untended, their potential nearly forgotten. But if there’s one thing we’ve learned about Tuscany, it’s that resilience is woven into the land itself.

With the expert hands of Luigi and Marco, our beloved caretakers, we slowly restored the groves to life—pruning, nurturing, and watching in awe as fresh branches pushed through, flowers bloomed, and the trees bore fruit once again. Today, 200 thriving olive trees stand as proof that nature, given time and care, always finds a way.

Every year’s harvest is met with storms, varying temperatures and loss, nearly 50% of our olives gone to the elements. But from challenge comes innovation. We pressed what we can—yielding an oil so rich, so deeply green, so full of the sweet, fatty richness of our Muraiolo, Frantoiano, and Leccino olives.
